Cooking strawberry jam
1. Before making the jam, it is very important to prepare the berries. Strawberries need to be selected ripe, medium-sized, whole, without damage. Remove the sepals from the selected berries and rinse 2-3 times in cool water.
Important! The most delicious jam is made from small ripe berries of the same size.
2. Washed berries should be placed in a cooking container and covered with granulated sugar. Then leave the berries for about 5 hours so that the juice stands out.
3. Put the saucepan with strawberries on the stove, turning on moderate heat. Bring the jam to a boil and cook for 4-5 minutes.
Useful advice: to make the strawberry jam thick, add 9% vinegar or lemon juice during cooking (1 tablespoon per 1 kg of berries).
4. Then remove the container from the stove and put it to cool in a dark place. This usually takes 11-12 hours.
5. After complete cooling, the process must be repeated: again bring to a boil and boil the berries for 5 minutes.
6. After the second cooking, remove the container and cool for 10-12 hours.
7. The third cooking is carried out in the same way as the two previous ones. After the jam is ready, it is cooled a little and poured into prepared sterilized jars and closed with lids.
