Strawberries are one of those berries that, when cooked with sugar, are able to hold their shape. That is, to cook delicious and aromatic jam from the fruits so that the berries do not boil over, it is quite possible that you just need to follow certain rules.

It is necessary

  • - 1 kg of strawberries;
  • - 1 kg of granulated sugar;
  • - a tablespoon of lemon juice (if the berries are sweet).

Step 1

The first step is to pick the berries. Moreover, it is better to collect it in dry weather, and two or three days before the procedure, limit watering or refuse it altogether.

Step 2

Then you should sort out the berries, remove the stalks and other debris, if necessary, rinse the fruits, dry them. To make the jam more beautiful, it is advisable to select strawberries of more or less the same size for it, that is, berries that are too small and too large should be removed for other purposes, for example, for making jam.

Step 3

Next, the prepared berries must be placed in a wide container, covered with granulated sugar and left for two to three hours for the fruits to release juice.

Step 4

After the indicated time, you can start cooking the jam itself (the berries should not be kept for more than three hours, even if the fruit has almost no juice). Put the bowl / pot with berries on fire and shake off the container every two to three minutes so that the fruits do not burn. The main condition for the jam to work out with whole berries is to exclude the moment of stirring the brew with a spoon.

After boiling the composition, it should be removed from the heat, covered with a lid / towel so that the contents do not dry out, insects do not get into it, and leave for 24 hours.

Step 5

Thus, the jam must be heated to a boil two more times, each time allowing it to cool completely and only then put on the stove again. At these stages of cooking, stirring is also permissible only by shaking off the container with berries.

Step 6

During the fourth cooking with the jam, it is necessary to let it simmer in the syrup for 20-30 minutes. 10 minutes before the end of the procedure, you can add lemon juice to the dessert, if required.

Step 7

The finished dessert can be laid out in pasteurized jars 10-20 minutes after removing it from the stove. And in order for the jam to be stored longer, after the cans have been sealed with boiled metal lids, they must be turned upside down, covered with a towel and left to cool completely.
