Cucumbers are very healthy. In addition to a large amount of water, they contain minerals, fiber, proteins, sugar, essential oils, vitamins C, B1, B2, and so on. In addition, they are loved by many, because both fresh and canned are delicious.
Bulgarian cucumbers
Ingredients:
- cucumbers - 3 kg;
- vinegar 6% - 1 l;
- sugar - 800 g;
- currant leaves - 8 pcs.;
- salt - 4 tablespoons;
- bell pepper - 1 pc.;
- bay leaf - 3 pcs.;
- carrots - 3 pcs.;
- garlic - 3 heads;
- parsley root - 1 pc;
- peppercorns;
- dill and parsley.
Wash small cucumbers (gherkins), peel the bell pepper from seeds and cut into slices. Cut the garlic into cloves and peel. Peel the carrots. Rinse currant leaves and greens under running cool water and shake.
Prepare the marinade. Stir in the vinegar, sugar and salt and bring everything to a boil. Put cucumbers, peppers, carrots, garlic and currant leaves in the solution and boil everything for 5 minutes.
Then remove the vegetables and place them in clean, sterilized jars. Add bay leaves, parsley and parsley, and peppercorns.
Boil the marinade and fill the jars with it. Roll up, flip and wrap immediately. Leave as it is until it cools completely.
Cucumbers in Indian
Pickled cucumbers are loved not only in Russia, but all over the world. In India, they are prepared with the addition of a large amount of spices.
Ingredients:
- cucumbers - 3 kg;
- apple cider vinegar - 1 liter;
- salt - 4 tablespoons;
- red bell pepper - 1 pc.;
- chili pepper - 3 pcs.;
- allspice - 3 tablespoons;
- garlic - 3 cloves;
- cloves - 1 teaspoon;
- onions - 2 heads.
Cucumbers for this recipe are best cooked in the evening. Pour the washed vegetables with cold water, add salt and leave in this form overnight. The next day, drain the water and rinse the cucumbers under running water.
Peel the bell peppers and cut into several pieces. Peel and chop the onions. Cut the hot chili into small pieces.
Put cucumbers, chili peppers, slices of sweet pepper and onion rings in prepared sterilized jars. Add the garlic cloves.
Make a spicy marinade. Pour apple cider vinegar over allspice and cloves. Bring the solution to a boil.
Pour the resulting hot marinade over the vegetables, not reaching about 1 cm to the edge of the jar. Roll up immediately and store in a dark place.
