The sun pumpkin is a universal fruit, because you can cook a wide variety of dishes from it, including various preparations for the winter, for example, wonderful desserts and pickles.
Pumpkin jam with orange
In the cold winter time, bright yellow pumpkin jam with a wonderful citrus aroma is ideal for a cup of hot tea. To make sweetness, you will need the following foods:
- 1 kg of pumpkin;
- 1 large orange;
- 1 kg of sugar;
- 1 tbsp. water.
Wash the pumpkin, peel it and remove the seeds from it, cut the fruit into small cubes. Peel the orange, remove the seeds from it and pass the pulp together with the zest through a meat grinder. Combine orange gruel with pumpkin and sugar, leave the preparation to infuse for 8 hours. Then add water to it and put it on the stove, when the jam boils, reduce the heat and cook the dessert for half an hour. Pour the finished pumpkin jam into dry sterilized jars, roll up the lids and store in a cool place.
Pumpkin puree with apples
A good preparation of pumpkin for the winter is mashed potatoes, it can be used as a filling for pies and buns, as well as used in baby food. For this dish you will need:
- 1.5 kg of pumpkin;
- 0.5 kg of apples;
- 2 tbsp. l. Sahara;
- 0.5 lemons.
Peel the pumpkin from the peel and seeds, then pass it through a meat grinder, process apples in the same way. Combine applesauce and pumpkin puree in an enamel bowl, add sugar to it, stir well. Put the mixture on low heat and, stirring occasionally, cook for two hours. 15 minutes before cooking, pour the juice of half a lemon into the preparation and stir. Pack the finished puree hot in sterilized jars and seal hermetically.
Pumpkin caviar
Fans of saltiness will like pumpkin caviar, for the preparation of which you will need the following products:
- 700 g pumpkin;
- 300 g of tomatoes;
- 300 g of onions;
- 300 g of carrots;
- 5 cloves of garlic;
- 3 tbsp. l. vegetable oil;
- dill greens;
- salt to taste;
- pepper to taste;
- 1 tbsp. l. vinegar 9%.
Grate pumpkin, peeled and seeds, on a coarse grater, mince carrots and tomatoes, finely chop the onion, pass the garlic through a garlic press.
Heat vegetable oil in a thick-walled saucepan and fry the onion in it, then add the pumpkin, cover and simmer for 15 minutes. After that, add the rest of the vegetables, herbs, garlic, pepper and salt to the pumpkin-onion mixture and stir well. Simmer the pumpkin caviar for another 20 minutes, then pour the vinegar into it, stir and put it hot in the jars.
