Instructions
Step 1
Before cooking the wheat, rinse it in cold running water, put it in a bowl and pour two glasses of boiling water over it. Leave the beans to sit for three to four hours with a lid on the bowl.
Step 2
Transfer the contents of the bowl to a saucepan and place over the fire. When the water boils, add salt, reduce heat to low and leave to simmer in a saucepan under the lid for 3 hours. Add water if necessary.
Step 3
Remove the pan from heat and pass the cooked wheat through a meat grinder twice.

Melt the butter, lightly fry the finely chopped onion in it and place the ground wheat in a skillet. Stir everything, close the lid, leave for another 5 minutes to sweat, then put the resulting wheat porridge on plates and serve.
