Pea soup with smoked shank is a classic dish. Yellow split peas boil well in mashed potatoes, forming a thick consistency. In such a rich soup, potatoes are not needed, it is already very satisfying, and even a second for lunch can not be cooked!
It is necessary
- - 500 grams of yellow split peas;
- - boiled and smoked shank weighing about 1 kg;
- - 2 carrots;
- - 3 onions;
- - 5 liters of water;
- - 4 things. bay leaf;
- - salt to taste.
Instructions
Step 1
Rinse the peas in three waters. Rinse the shank with warm water. Put the peas and shank in a large saucepan, pour five liters of cold water and put on the stove on high heat. Bring to a boil, stirring occasionally - so that the peas do not stick to the bottom - and remove the foam. Reduce heat to a minimum, cover the pan with a lid and simmer the soup at a low boil for 3 hours until the peas are completely boiled.
Step 2
Prepare carrots and onions: peel, rinse; cut carrots into strips or grate on a coarse grater, chop the onion.
Step 3
Remove the shank from the pan, and instead add the carrots and onions and continue cooking. Cut the shank, separate the meat from the skin and bones, chop finely and send back to the pan.
Step 4
When the onions and carrots are boiled until soft, put bay leaves in the soup, salt to taste and simmer for another 5 minutes. Turn off the stove and let the soup steep for 30 minutes. Rye or wheat croutons can be served with the soup.
