It is necessary

  • - gelatin - 10 g;
  • - milk - 120 ml;
  • - vanilla sugar - 1 teaspoon;
  • - cream with a fat content of 35% - 200 ml;
  • - sugar - 3 teaspoons;
  • - a strip of lemon zest measuring 8 x 1 cm;
  • - cinnamon - 1 pinch;
  • - frozen cherries - 100 g;
  • - currant jam - 1 tablespoon;
  • - finely ground corn flour - 1 pinch.

Instructions

Step 1

Pour milk into a bowl and pour gelatin into it. Let this mixture brew for 5 minutes. Remove the frozen berries from the refrigerator and defrost them at room temperature.

Take a saucepan and mix together the following foods: sugar, vanilla sugar, cream, lemon zest, and cinnamon. Put this mixture on high heat and keep it there until it boils. After this has happened, the fire should be reduced and cooked for another 5 minutes, while stirring constantly. Then add the gelatin with milk to the pan and cook, stirring occasionally, until the gelatin dissolves completely, that is, within 2-3 minutes. Just don't bring the mixture to a boil. At the end of this procedure, remove the lemon zest.

Step 3

Transfer this mixture to a bowl. Then take another one, only one that is larger than the previous one, and fill it with ice water. Put a cup with the mixture in water and beat it in this ice bath for 10 minutes, that is, until it thickens.

Remove mixture from ice bath and pour into molds. In this state, send it to the refrigerator for 4 hours.

It's time to make the cherry sauce. It is necessary to remove the seeds from the berry, then rub it through a sieve.
