Pea soup is a healthy and tasty dish. It can be cooked in meat broth, with the addition of smoked meats, in vegetable broth. For vegetarians, there are many recipes for making lean pea soup. One of them is with mushrooms, which increase the nutritional properties of the soup and improve its taste and aroma.

It is necessary

    • fresh mushrooms - 100 g;
    • peas - 150 g;
    • potatoes - 2-3 pcs.;
    • onion - 1 pc.;
    • carrots - 1 pc.;
    • vegetable oil;
    • water - 2 l;
    • salt
    • spice;
    • parsley.

Instructions

Step 1

Choose peas. For soup, use chopped soup - it cooks faster than whole grain. Rinse it off in cold water. Remove floating peas. Fill with clean water and leave to soak. Add fresh water after 8 hours. Simmer over medium heat. When the peas boil, remove the foam and turn the heat down. Stir the peas from time to time to prevent them from burning.

Step 2

Cut vegetables: onions - into thin half rings, carrots - into strips or chop them with a grater. Cut the mushrooms into slices.

Step 3

Pour vegetable oil into the pan. Add the chopped onion. Pass it until golden brown. Add carrots and mushrooms. Continue to fry everything together for a few more minutes.

Step 4

Peel the potatoes. Cut it into cubes. Add to the pot with the peas. Season with salt to taste. When the potatoes and peas are done, blend them in a blender until puree is obtained. Transfer it to a saucepan.

Step 5

Put on fire again. Add browned vegetables and mushrooms. Place two bay leaves and 3-5 allspice peas in the puree soup. Keep on low heat for another 3-5 minutes.

Step 6

Chop parsley. Add it to every serving of soup before serving.
