Step 1

Rinse your tongue with cold running water and place in a saucepan. Don't waste time washing the delicacy thoroughly. Take a low and wide saucepan. The tongue should lie in it, in contact with the walls.

Step 2

Boil water in a kettle. Pour boiling water over your tongue. The protein on the surface will grab immediately and the tongue will be very juicy. Refill the kettle with water and let it boil.

Put a pot of tongue on the fire. As soon as the water boils, drain it immediately. Together with this water, all harmful extractives and dirt on the uneven skin of the tongue will be removed from the dish. Pour boiling water over again and put on fire.

Reduce heat under pan to low. Now you can put vegetables: peeled onion, carrots, celery root and parsley. Cover the pan with a lid and simmer for two hours over very low heat. All this time, the water should boil almost imperceptibly.

The skin is easily removed from the chilled tongue. Remove it by cutting with a knife in difficult places. Then put it back in the pot. Increase the heat to bring the broth to a quick boil. After that, turn off the burner completely and leave the prepared tongue in the broth for 15 minutes.
