Many housewives, shortly before the holidays, begin to wonder how to properly cook beef tongue for slicing. In fact, this is not difficult. The main thing is to choose the meat correctly. A good fresh tongue should be small, greyish pink, free from severe damage or dirt. Another point to consider is time. It takes a lot to cook beef tongue.
It is necessary
- - beef tongue - 1 kg (or 1 pc.);
- - lavrushka - 3 leaves;
- - white onion - 2 pcs.;
- - peppercorns of various colors - 6 pcs.;
- - medium-sized carrots - 1 pc.;
- - sea or rock salt - 1 tbsp. the spoon;
- - water - as needed.
Instructions
Step 1
The first step is to wash your tongue well. Remove stubborn dirt, if any. Put the product in a cup of warm water, leave for 30-45 minutes. Clean thoroughly on all sides to get rid of dirt. Transfer to a saucepan. Pour water so that it covers the meat by 10-12 cm.
Step 2
Cook the beef tongue correctly for slicing for 2 hours. In this case, 30 minutes after the start of cooking, spices, seasonings, peeled and cut in half onions with carrots should be added to the pan. Salt the broth in which the tongue is cooked is 10-15 minutes before the meat is cooked. At the same time, you can put some greens (optional!).
Step 3
After the beef tongue is cooked, it must be slightly peeled. To do this, first put the meat in ice water and rub it lightly with a sharp knife after about 20 minutes. After that, the tongue can already be cut into portioned pieces and served. It turns out very tasty, albeit not fast.
