Beef tongue can be prepared as a separate dish or used for cooking sausages, canned meat. It is widely used due to its delicate and pleasant taste. Also, this by-product contains a huge amount of useful vitamins and minerals: zinc, magnesium, calcium, iron, vitamins B, PP, E and so on. This product is low in calories (about 180 kcal per 100 g) and low in cholesterol. And this is probably the main indicator for meat offal. Beef tongue is perfectly absorbed by the human body and normalizes digestion. Therefore, many people willingly include it in their diet, especially with various diets.

First you need to choose the right product in a store or market. Fresh and high-quality beef tongue has a pink or light purple color, is firm to the touch, and when cut, only clear juice is released from it.
Then go directly to the preparation of this product. This process is quite time consuming and can take several hours.
First, the beef tongue is thoroughly washed. Pour water into a saucepan and add some salt to it (for 3 liters of water, 1 tbsp. L. Salt). Then this meat product is put into it. After boiling water, the fire is reduced. If desired, the beef tongue can be pre-cut into pieces. But it is better not to do this, then the healthy juice will be completely preserved in this product.
The cooking time depends on the size of this offal and on the age of the animal after which it was received: from young cows and calves - no more than 1 - 1, 5 hours, from adult cows - 2 - 2, 5 hours. A completely finished beef tongue is if, after being pierced with a knife, clear juice will be released from it. The ichor stands out from the uncooked offal. In the process of cooking, bay leaves and black peppercorns are added to the pan.
After boiling, the beef tongue is cooled and peeled. Then you can simply cut it into pieces and serve, decorate with herbs. And also use for preparing various dishes, such as salads.
