Beef tongue is a delicacy product with a delicate texture, exquisite taste and a lot of nutritional properties. Most often, the tongue is served on the holidays as a cold snack. It is also added to various salads and made from it aspic. But how to boil the tongue so that after boiling it is as juicy as possible? For this, it is important to observe a few simple nuances.
It is necessary
- - beef tongue (or pork);
- - large carrots - 1 pc.;
- - large onions - 1 pc.;
- - dried cilantro (coriander) - a few pinches;
- - bay leaf - 2 pcs.;
- - black peppercorns.
Instructions
Step 1
A few hours before cooking, put the beef (pork) tongue in a bowl of cold water and leave it on the table. This will help clean it up faster before cooking. When the tongue is ready, take a saucepan, fill it with cold water and place it on the stove. Peel carrots and onions. After that, rinse all vegetables and tongue in tap water, thoroughly washing off all dirt.
Step 2
When the water in the pot boils, dip your tongue, carrots, onions, bay leaves, black peppercorns, and dried cilantro into it. Bring to a boil again. Then reduce the temperature to the lowest setting and cover. Boil the tongue with vegetables and spices for 1 hour.
Step 3
When the tongue is boiled, remove it from the pan and place it in a bowl of chilled water. Leave it to cool in this way for 10-15 minutes. An important nuance: the water in which the tongue will lie must remain cold. To do this, you need to change it several times as it warms up, or you can simply put the bowl with the tongue under a stream of running water.
Step 4
Then take the cooled tongue, transfer it back to the pot with the broth in which it was cooked and bring to a boil. After that, it can be used for its intended purpose - to prepare a cold appetizer from it in the form of slicing, chop it for salads, and so on.
