Actually, most of the recipes for fritters are based on kefir. There is only one principle: the batter is kneaded, laid out with a spoon in a hot pan, fried on high heat on both sides until a confident golden color. To add variety to a classic recipe, you can use additives. It is interesting, and, at times, unusual additives that will turn banal kefir pancakes into a boring dessert or a savory snack. Here are recipe options.
For salty lovers: pour a glass of kefir into a bowl. Add salt, pepper, chopped green onions, minced garlic clove is not forbidden. Rub a medium zucchini on a fine grater, squeeze it carefully, there is no need for excess liquid in the dough. Stir the zucchini into the kefir, add one egg, half a teaspoon of baking soda and two to three tablespoons of flour. The consistency of the resulting dough should resemble thin sour cream. Now spread with a tablespoon in a frying pan, fry until tender. They are good both hot and cold.

If you prefer sweet to salty, then here you can come up with your own version. As an idea: pancakes with cherries. Wash the cherries first, free them from the seeds, heat them with a fork and lay them down, let them rest and give juice. We don't need this juice in the dough, drain it, you can put it in a mug, then drink it with pancakes. Pour a glass of kefir into a bowl, beat in an egg and add one teaspoon of vegetable oil, mix. Then add vanillin (1 sachet), sugar (3 tablespoons), baking powder (half a sachet), cherries freed from juice. Stir again. Now it's the turn of the flour. Look at the situation again, you will see for yourself when there is enough of it, the dough should not be too thick. Fry similarly to zucchini pancakes, you can sprinkle with powdered sugar on top.

And here is an option for the finicky kids. If you don’t know how to feed a reenk with an apple / carrot / beet, pancakes will come to your aid. They are prepared in the same way as with cherries, but instead of the cherry itself, add grated carrots, for example. Or an apple. Or beets. Or make a little of both of those, and others, and the third - you get a multi-colored dish with fragrant pancakes that any child will gladly eat. He will also ask for an additive.
