To cook flounder deliciously, it is important to follow the entire process step by step. First, remove the butter from the refrigerator and leave at room temperature to soften a little.

Cut the carcass, free it from entrails, head and fins. Rinse thoroughly. Place the fish on the board light side up, make several cross cuts on it, based on the size of the carcass, usually 2-3 is enough.

Combine the pepper and salt and rub the flounder with this mixture, taking special care to get the seasoning into the cuts. Transfer it to a cup, drizzle with juice from half a lemon and set aside to stand for 15 minutes. Cut the remaining half of the lemon into thin slices.
