  • For savory eggplants:
  • - 4 eggplants;
  • - 400 g of tomatoes;
  • - 50 g of lard;
  • - 3 small onions;
  • - 300 g chicken fillet;
  • - 2 tbsp. l. chopped parsley;
  • - 150 g of hard cheese;
  • - 2 tbsp. l. bread crumbs;
  • - 125 ml of meat broth;
  • - ground black pepper;
  • - salt.
  • For baked eggplants with sausages:
  • - 4 sausages;
  • - 2 eggplants;
  • - 2 cloves of garlic;
  • - 1 egg;
  • - 100 g of processed cheese;
  • - 100 g of hard cheese;
  • - 2 tbsp. l. butter;
  • - vegetable oil;
  • - 3 tbsp. l. ketchup;
  • - dill greens;
  • - basil;
  • - salt;
  • - pepper.

Instructions

Step 1

Spicy eggplant

Wash the eggplants thoroughly, cut off the edges, carefully remove the core with a teaspoon, salt. Wash the tomatoes, dry and cut into cubes. Chop the bacon with a knife and melt in a pan. Finely chop the onion and save in a pan with lard. Rinse the chicken fillet, dry with a napkin, cut into small cubes and fry in a pan with lard and onions. Combine the tomatoes with chopped parsley, then season with salt and pepper. Cut 100 grams of cheese into small cubes and mix with breadcrumbs. Then combine all the ingredients with the chicken and stir gently.

Rinse prepared eggplants under running water, pat dry with a towel and fill with filling to the very edge. Then place them in a fireproof dish and cover with meat broth (you can make it from a cube). Preheat the oven to 200 ° C and place the pan with stuffed eggplant in it for an hour to bake. Grate the remaining hard cheese on a coarse grater. Sprinkle the finished eggplants with grated cheese and put in the oven for a few more minutes to melt the cheese slightly.

Step 3

Eggplant baked with sausages

Wash the eggplants and, without removing the skin, cut lengthwise into 2 halves. Then carefully remove the pulp from each. Grease the inside of the eggplant halves with butter, salt and pepper. Fry the pulp cut from the eggplant in vegetable oil, cool and mash with a fork. Add melted and hard cheese, finely chopped herbs and beaten egg. Season with pepper, salt and mix well.

Step 4

Place a sausage in each half of the eggplant, brush with ketchup, place the eggplant-cheese mass on top. Place the stuffed eggplant on a greased baking sheet and bake in the oven at 180 ° C for 20-30 minutes. Serve baked eggplants with sausages to the table, greased with ketchup and garnished with basil leaves.
