Often when looking at leeks on store shelves, the question arises: what can you cook with it? A very simple solution is cream soup, which requires very simple ingredients and does not take long to prepare.
It is necessary
- - 5 stalks of leeks (only the white part);
- - 70 gr. butter;
- - 2 medium sized potatoes;
- - a liter of chicken broth or water;
- - 200 ml of cream;
- - pepper and salt.
Instructions
Step 1
Potatoes and leeks need to be washed and peeled well.
Step 2
Finely chop the leeks, cut the potatoes into small cubes.
Step 3
Melt butter in a frying pan, fry the leeks in it for literally 2-3 minutes.

Add potatoes to the pan, season with salt and pepper, stir and simmer for 5 minutes over medium heat. After that, you need to pour in the broth so that it covers the vegetables.
Step 5
As soon as the potatoes are cooked, turn off the fire, let the broth with vegetables cool.
Step 6
Pour the broth with vegetables into a blender and grind. Add the cream and turn on the blender again for 2-3 minutes.

In summer, the soup can be served chilled, but in the cold season it is better to give preference to a warm or hot dish.
