Many housewives love to pamper their loved ones with something delicious. On the eve of the New Year holidays, this issue becomes the most urgent. A variety of salads are the best option for decorating the table. One of them is a tender chicken breast salad with pickled mushrooms. Thanks to affordable and simple ingredients that are harmoniously combined with each other, it will not be difficult to prepare it.
It is necessary
- - chicken breast - 1 pc.;
- - pickled mushrooms - 250 g;
- - onions - 1 pc.;
- - potatoes - 3 pcs.;
- - carrots - 2 pcs.;
- - hard cheese - 250 g;
- - Provencal mayonnaise - 3 tbsp. l.;
- - water - 100 ml;
- - vinegar 9% - 100 ml;
- - salt.
Instructions
Step 1
Place the skinless and pitted chicken breast in a saucepan and pour boiling water over it so that the water covers it completely. Bring to a boil and simmer for 30 minutes under a closed lid. This method of cooking will keep the breast juicy. Drain the broth from the cooked breast. When it's cool, cut it into small pieces. The smaller the pieces, the softer the salad will turn out.
Step 2
Cook the jacket potatoes and carrots in a separate bowl. Cool the boiled vegetables, peel them and grate them on a coarse grater. We also grate the cheese.
Step 3
Peel and chop onions. Cover it with water and vinegar. Leave to soak for 15 minutes. Meanwhile, remove excess liquid from pickled mushrooms and cut them into cubes.
Step 4
Let's start forming the layers of our salad. Take a large plate or salad bowl and arrange the sliced chicken breast evenly. Add a little salt and brush with 1 tablespoon of mayonnaise.
Step 5
In the same way, you need to lay all the other layers of lettuce in the following sequence:
- chopped pickled mushrooms;
- onion;
- potatoes and a pinch of salt;
- 1 tablespoon of mayonnaise;
- carrot;
- 1 tablespoon of mayonnaise.
At the very end, garnish the salad with grated cheese and place in the refrigerator to soak for 2 hours.
