Step 1
Wash the goose carcass thoroughly and wipe it with a napkin, remove excess fat with a knife. Pierce the breast, abdomen, and thighs with a fork.
Step 2
It is best to cut the wings off, since after cooking the bones are bare and look very unsightly. Rub the carcass thoroughly with pepper.
Step 3
Rinse the prunes thoroughly and soak in cognac for about 35 minutes, then transfer the prepared berries to the inside of the goose.
Step 4
Fasten the edges of the goose abdomen with strong threads or toothpicks.
Step 5
Transfer the stuffed goose to a baking bag, close with a clasp and cut off one of the corners so that steam escapes. Place the baking sheet with the goose in a well-heated oven and bake first over high heat, and then over medium for about 2.5 hours.
