- 1 kg of potatoes;
- 5st milk;
- 100g fresh chanterelles;
- 150g butter;
- 2pcs onions;
- 50g dill greens.
- For the second recipe:
- • 5-6 large tomatoes;
- • 2-3 cloves of garlic;
- • 1 onion;
- • 2 sprigs of fresh herbs;
- • 50g of olive oil;
- • 100g of wheat bread;
- • 1 tsp. red aromatic pepper;
- • 100g of parmesan cheese;
- • Vegetable broth.
- For the second recipe:
- • broth - 1l;
- • onion - 1pc;
- • broccoli - 200g;
- • carrots - 1 piece;
- • pepper - 1 pc;
- • potatoes - 4 pcs;
- • butter -50g;
- • cream 20% - 30g;
- • egg yolks - 2 pcs;
- • dill and salt to taste.
- For the third recipe:
- • broth - 1l;
- • onion - 1pc;
- • broccoli - 200g;
- • carrots - 1 piece;
- • pepper - 1 pc;
- • potatoes - 4 pcs;
- • butter -50g;
- • cream 20% - 30g;
- • egg yolks - 2 pcs;
- • dill and salt to taste.
Instructions
Step 1
Recipe 1. "Mashed potato soup with chanterelles." - Peel and wash the onion. Saute it in butter. - Peel, wash and coarsely chop the potatoes. Add it to the onion and mix everything well. Then, pour 5 glasses of water, salt and cook for 25-30 minutes. - Make mashed potatoes using a sieve or blender. - Boil the milk, add it to the resulting mass and mix everything well. Bring to a boil. - Wash the chanterelles, chop finely and fry until tender. Then add them to the soup, and stirring vigorously, bring it to a boil. - Before serving, season the soup with oil, sprinkle with herbs. This soup can be combined with croutons.

Recipe 2. "Italian tomato puree soup." - Pour boiling water over the tomatoes for a couple of minutes. Then remove the skin from them, cut, salt and leave until the juice comes out. Squeeze the juice into a separate bowl. - Wash and chop the onion and garlic. Fry in olive oil, add tomatoes, herbs and simmer a little. - Pour broth into vegetables and simmer until tender. Then remove from heat, add tomato juice and diced bread. Cover and let sit for 10 minutes. - Whisk the mixture with a blender or rub through a sieve and bring to a boil again. - Add red pepper to taste. - Pour the soup into bowls, sprinkle with grated Parmesan and herbs on top to make the soup very tender and delicious. It can also be eaten cold.

Recipe 3. "Vegetable puree soup with broccoli." - Wash potatoes, carrots, onions and peppers, peel and cut into large pieces. Divide the broccoli into florets. - Bring the broth to a boil and add all the vegetables in it and cook until tender. Then put all the ingredients in a separate bowl. Set aside two sprigs of broccoli for decoration, and whisk the rest of the ingredients in a way convenient for you, until a creamy mass is formed. - Then pour in the broth in which the vegetables were cooked, add the butter and beat again. The resulting mass, stirring vigorously, bring to a boil on a small flame. - Beat the egg yolks together with chopped herbs, add cream, salt and mix well. - Pour the dish into plates, garnish with broccoli and a sprig of herbs. The soup turns out to be delicious, tasty and extremely healthy.
