- zest from 1 orange.

Place the salmon skin side down on plastic wrap. In a bowl, combine sugar, salt, pepper, dill, fennel, orange zest. Pour the whiskey over the fish and rub it into the flesh, add the spice mixture and spread evenly over the fillets. Wrap the salmon tightly in plastic wrap, place in a bowl and refrigerate for at least 72 hours. Rinse the finished pickled salmon under running water, wipe dry and cut into thin slices. These fish can be stored in a cool container for up to 2 weeks.
