New Year for many is one of the most important holidays. When choosing dishes for a gala dinner, some prefer fish recipes. This may be due to the love for this product or the fact that the Orthodox are fasting at this time. Of course, not every fish is suitable for the festive table.

Which fish to choose

When choosing fish for a New Year's dinner, it is worth determining how many people you are cooking for, how much time you are willing to spend on cooking and how much fat you want the dish to be.

The fatter the fish, the richer and richer its taste.

Lean fish include cod, halibut, haddock, perch and hake. This fish is best cooked on the grill or steamed. It usually has a lot of bones and is not the best choice for a New Year's table. Medium fat fish include tuna, mackerel, swordfish. These types of fish can be fried and baked. They take some time to cook.

The best choice for a gala dinner is aromatic, oily fish such as salmon, sturgeon, and trout. There are many recipes for ceremonial dishes from such fish, many do not require a lot of time to prepare, others can be prepared in advance.

For several eaters, it is better to buy fish steaks, for a large company - whole carcasses of fish.

Recipes for the New Year's table

A good choice of fish dish for New Year's meal is salmon baked in foil. You can prepare "envelopes" in advance, then you will not have to be distracted from the holiday for a long time, it will be enough just to put a baking sheet with salmon in a preheated oven for a few minutes. For two servings you will need:

- 2 salmon fillets, each weighing about 200 g;

- 2 teaspoons of olive oil;

- 4 teaspoons of chopped basil greens;

- 4-5 cherry tomatoes;

- salt pepper;

- food foil.

Cut two large pieces of foil that are large enough to wrap around the fish several times. Fold each piece in half and brush with olive oil. Place the salmon fillets skin side down in the center, salt and pepper each piece, sprinkle with herbs and place the tomatoes cut into circles on them. Form foil into envelopes. Bake the fish in an oven preheated to 220 ° C for 15 minutes.

Another popular way to cook salmon for the holiday table is to pickle it and use it as a snack. Salmon cooked in a whiskey marinade will turn out to be delicious and ceremonial. You will need:

- salmon fillet weighing 500 g;

- 1 cup brown sugar;

- ¾ glass of salt;

- 1 fennel onion, cut into thin rings;

- ½ cup fresh dill, chopped;

- 1 tablespoon of ground black pepper;

- ¼ cups of whiskey;

- zest from 1 orange.

Place the salmon skin side down on plastic wrap. In a bowl, combine sugar, salt, pepper, dill, fennel, orange zest. Pour the whiskey over the fish and rub it into the flesh, add the spice mixture and spread evenly over the fillets. Wrap the salmon tightly in plastic wrap, place in a bowl and refrigerate for at least 72 hours. Rinse the finished pickled salmon under running water, wipe dry and cut into thin slices. These fish can be stored in a cool container for up to 2 weeks.
