Chicken with lemon rice is a healthy and tasty dish that will definitely decorate any festive table!
It is necessary
- - zest and juice of 1 lemon
- - 4 chicken breast fillets, not coarsely chopped
- - 225 g of rice
- - 1 tbsp. l. sunflower oil
- - 150g mini corn cobs
- - 150 g sweet pea pods, chopped
- - 400 g sweet and sour sauce
Instructions
Step 1
Pour half of the lemon juice into a non-metallic bowl and place the chicken in it. Refrigerate for 15 minutes to 2 hours.
Step 2
Cook the lemon zest rice in boiling water for 15 minutes until tender. In the meantime, discard the chicken in a colander.
Step 3
Heat the oil in a skillet, add the chicken and cook over high heat for about 5 minutes until tender. Add vegetables and sauce, cook for 2 more minutes. Place the rice in a colander.
Step 4
Season with the remaining lemon juice and serve immediately with the chicken.
