Diversify your side dish collection with this refreshing dish!
It is necessary
- - 2 tsp olive oil;
- - 100 g of Basmati rice;
- - 1, 5 cups of chicken broth;
- - half a lemon;
- - salt to taste;
- - freshly ground black pepper to taste;
- - 2 feathers of green onions;
- - 1 tsp peppermint.
Instructions
Step 1
Place a saucepan over medium heat and heat 2 tsp in it. olive oil. While the oil is heating, finely chop the green onions and place them in the pot along with the peppermint (I use dried). Saute the food for a minute, stirring constantly.
Step 2
Then add rice to the greens and, stirring constantly, keep on the fire for about 2 minutes: all the rice should be covered with oil and lightly fried.
Step 3
Boil the chicken stock in a separate container (you can use the microwave). Season with salt and pepper to taste.
Step 4
Squeeze the juice out of half of the lemon and remove the zest from it using a fine grater or a special knife. Add all the ingredients to the saucepan, pour in the chicken broth, increase the heat to bring it back to the boil, then turn the burner down to low, cook the rice, covered, until it has absorbed all the liquid. Let the garnish stand for about 10 minutes before serving. Garnish with lemon wedges and fresh mint leaves when serving!
