Grilled zucchini with mint, garlic and lemon is a great side dish for any grilled meat. Cooking zucchini is easy, it turns out to be a healthy appetizer, mint with garlic and lemon adds a great flavor to it.

- For four servings:
- - 500 g zucchini;
- - 1 lemon;
- - 2 cloves of garlic;
- - 30 g parmesan cheese;
- - 10 g of mint leaves;
- - 2 green chili peppers;
- - 2 tbsp. tablespoons of olive oil;
- - coarse salt.
Instructions
Step 1
Preheat your grill or grill first. Cut the courgettes lengthwise into thin 5 mm slices. Since the recipe requires young zucchini, you do not need to peel them. Transfer the zucchini to a bowl, pour in half the specified amount of olive oil. Peel the cloves of garlic, chop, add to the zucchini, stir.
Step 2
Place the courgettes on a wire rack and cook for about 5 minutes until tender, turning the slices over so they don't burn. A golden crust should form on each side. Squeeze the juice from the lemon, rub the zest on a fine grater. Peel chili peppers from seeds, chop finely.
Step 3
Put the zucchini on a plate, sprinkle with lemon juice, sprinkle with lemon zest and chopped chili. Drizzle with the rest of the olive oil and leave to cool. At the same time, the zucchini will be saturated with the aroma of oil, pepper and lemon.
Step 4
Rub the Parmesan cheese, cut the mint with a sharp knife. Sprinkle cooled zucchini with mint and cheese. Salt to taste, serve as a healthy side dish for meat, can be served on the table and as a festive snack.
