It is necessary

  • - salmon fillet 800 g;
  • - olive oil 5 tablespoons;
  • - zest of 2 lemons;
  • - juice of 2 lemons;
  • - potatoes 500 g;
  • - butter 200 g;
  • - wild garlic 60 g;
  • - spinach 30 g;
  • - chorizo 100 g;
  • - shallots 1 pc.;
  • - garlic 1 tooth;
  • - dry sherry 2 tablespoons;
  • - wine vinegar 1-2 tablespoons;
  • - dry chili pepper 0.5 tsp;
  • - salt.

Instructions

Step 1

Wash the salmon fillet, dry with paper towels and cut into portions. Rub with olive oil, lemon zest, salt and pepper and leave to marinate for half an hour. Then grill on both sides.

Step 2

Boil the potatoes in a peel until tender, peel and cut into slices. Season with olive oil and grill.

Step 3

For wild garlic oil: mix butter with lemon zest. Pour boiling water over ramsons and spinach. Mix the herbs with 1/2 teaspoon of olive oil and beat in a blender. Add the resulting mixture to the butter. Season with lemon juice and salt.

For the dressing, fry the chorizo in 1 tablespoon of olive oil along with chopped shallots and garlic for 3 minutes. Add sherry and vinegar, season to taste and cool. Put fish and potatoes on portioned plates, pour dressing on top and add wild garlic oil.
