The popular festive salad "Herring under a fur coat" is prepared in almost every home for family celebrations. However, this is far from the only appetizer of this delicious fish. Also try making a low-calorie and very healthy herring salad with celery and apple, or add fresh vegetables and crispy croutons to it.

Salad "Herring under a fur coat"

Ingredients:

- 600 g fillet of slightly salted herring;

- 1 beet;

- 2 potatoes;

- 1 onion;

- 1 carrot;

- 4 chicken eggs;

- 2 tbsp. table vinegar;

- 180 g of mayonnaise.

Ready-made herring fillets are a great option for those who do not like to tinker with fish. However, the taste of the salad will be much richer and more delicate if you take the main ingredient, whole salted in a barrel, and cut it yourself.

Wash all vegetables and cook until tender: potatoes and carrots for 20-25 minutes, beets for 1 hour. Cool everything and peel. Remove the husk from the onion, chop it and marinate in vinegar for 20-30 minutes. Boil hard-boiled eggs 8-9 minutes after boiling water. Chop the herring fillets with a knife, trying to remove all the bones if possible.

Grate eggs and vegetables on a coarse grater and place in separate containers. Take a flat, round or oval dish. Gather the salad on it in layers, carefully smearing each with mayonnaise, in the following order: potatoes, herring with pickled onions, eggs, carrots, beets. Let the dish sit in the refrigerator for at least 1 hour.

Diet herring salad with apple and celery

Ingredients:

- 250 g fillet of slightly salted herring;

- 1 large green sweet and sour apple ("Granny Smith", "Semerenko");

- 3 stalks of celery;

- 2 tbsp. 20% sour cream;

- salt;

- a handful of fresh or thawed cranberries.

The energy value of such a salad is only 100 kilocalories per 100 g. The presence of celery in it, known for its so-called negative calorie content, makes the dish even lighter.

Cut the fish fillet into large pieces, the celery stalks into transverse half-rings. Cut the peel from the apple, cut the core out of the fruit and cut the fruit pulp into thin slices. Combine all the components of the salad in one bowl, season with sour cream, salt to taste, if necessary. Garnish with cranberries.

Herring salad with croutons

Ingredients:

- 300 g fillet of slightly salted herring;

- 100 g of rye bread;

- 4 cucumbers;

- 100 g lettuce;

- 50 g of dill;

- 2 tbsp. white wine vinegar;

- 4 tablespoons vegetable oil;

- a pinch of ground black pepper;

- 1/3 tsp dried coriander seeds;

- salt.

Cut the rye bread into even cubes and dry them in the oven at 180oC until crisp and golden brown. Cut the herring into equal sized pieces. Do the same with cucumbers. Rinse the green salad, pat dry on a paper towel, and tear with your hands. Chop the greens.

Make a wine vinegar sauce with vegetable oil, black pepper, coriander seeds, 1/3 tsp. salt and whisk. Cover the dish with lettuce flakes, put cucumbers, herring on top, pour over everything with dressing, sprinkle with dill and crackers. Serve the appetizer right away or the bread will get wet.
