Green salad

A diet dinner can consist of a light salad, for the preparation of which you will need: - 1 bunch of lettuce leaves; - 1 large cucumber; - 3 olives; - 1 boiled egg; - 0.5 tsp mustard; - a pinch of black pepper; - 0.5 tbsp. olive oil; - 1 tbsp. lemon juice.

Wash the lettuce leaves and tear them coarsely with your hands, place on a plate. Cut the cucumber into large slices and lay on top of the herbs, add the olives cut into slices here.

Combine mustard, black pepper and olive oil in a cup, stir well. Pour the contents of the plate with the resulting dressing, decorate the salad with the egg cut into quarters on top.

Fish with vegetables

An excellent dietary lunch - fish with vegetables, for this low-calorie dish, take the following products: - 400 g of sea fish fillets; - 2 stalks of celery; - 3 fresh tomatoes; - 0.5 lemons; - 1 onion; - 1, 5 tbsp. olive oil; - a pinch of dried thyme; - salt to taste; - pepper to taste.

Squeeze the juice out of the lemon, mix it with salt, pepper and thyme. Spread lemon marinade on fish and leave to soak for 15 minutes.

While the fish is marinating, cut the onions into thin half rings, finely chop the celery, remove the skin from the tomatoes, divide them into quarters and chop in a blender.

Pour olive oil into a heavy-bottomed saucepan, lightly fry the onion in it, then pour in the tomato puree and add the celery. Keep the vegetables on the fire for minutes, then add the fish to them and cook for another 15 minutes.

Diet borsch

For lunch or dinner, you can pamper yourself with delicious borscht made from vegetables and chicken breast. To cook the soup, you will need the following components: - 1 chicken breast; - 1 onion; - 1 carrot; - 2 small beets; - 2 fresh tomatoes; - 1 bell pepper; - 400 g of cabbage; - salt to taste; - 1-1.5 liters of water.

Boil the chicken breast until tender, then remove from the pan, cool and cut into small cubes. Boil the beets in a separate container, or even better, bake them in the oven, so the root vegetable will retain more vitamins and minerals. Cool the finished beets and grate.

Cut the onions into small cubes, grate the carrots on a coarse grater, finely chop the cabbage. Scald the tomatoes with boiling water and peel them, then cut into small wedges. Peel the bell pepper from the seed box and cut into thin strips.

Bring the broth remaining from the chicken breast to a boil, salt to taste, put all the vegetables in it except the beets and cook until tender. After that, put the chicken and beets in the soup, keep the borsch on the fire for a few more minutes. Leave the finished dish covered for 15 minutes before serving.
