Kebabs are an integral part of most family and friendly picnics. During outings into nature, I want to cook something special, but not too burdensome for the body, in order to save energy for active entertainment. The best choice in this case is lean beef softened with the right marinade.
Beef kebab in kefir marinade
Ingredients:
- 1 kg of beef or veal;
- 1 liter of kefir;
- 2 onions;
- a quarter of a lemon;
- 15-30 g of dill;
- 5 black peppercorns;
- 0.5 tsp ground black pepper;
- 1, 5 tsp salt.
Beef is less pickle-absorbing than pork or lamb, so cut it into small cubes. For comparison, take 2 matchboxes stacked on top of each other.
Wash the meat, cut off the films if necessary and cut the beef into pieces, if possible, giving them the shape of a cube or parallelepiped. Rub them with salt and ground pepper. Mix kefir with juice squeezed from a quarter of a lemon and chopped dill. Peel and finely chop the onion and add to the marinade along with the peppercorns.
Marinate the beef slices in the kefir mixture, cover the dishes with cling film and refrigerate for 4 hours. Grill the marinated kebab over red-hot coals.
Beef kebab marinated with kiwi
Ingredients:
- 3 kg of beef;
- 1 kiwi;
- 2 tomatoes;
- 6 onions;
- 1 tbsp. seasoning mixtures (black pepper, basil, granulated garlic, cumin, coriander);
- 2 tbsp. salt.
Use only ceramic, glass or enamel dishes for marinating kebabs. These materials are more resistant to chemical reaction with the acids contained in the marinade, accompanied by the release of toxins.
Prepare and cut the meat. Remove the husks from the bulbs and chop them. Cut the tomatoes and kiwi pulp into small slices. Place all vegetables and fruits in a bowl of kebabs. Sprinkle everything with the seasoning mixture and salt and stir gently. Be careful, ready-made kebab spice kits may already contain salt.
Place an inverted plate on top and place oppression, a glass jar of water. Marinate the beef shashlik for at least an hour, but no more than 4 hours, otherwise the meat will become too soft. String it on skewers and start frying.
Beef shashlik in mineral water
Ingredients:
- 2 kg of beef;
- 1 liter of carbonated mineral water;
- 2 onions;
- half a lemon;
- 1-1.5 tsp spices for barbecue;
- 1, 5 tbsp. salt.
Place the beef slices and onions, chopped into thick rings, into a container. Add spices there and stir everything, being careful not to damage the onion. Pour 3 tbsp into the bowl. mineral water, cover it with a lid and keep the kebab in the refrigerator overnight. After that, sprinkle it with lemon juice, salt, stir again and leave in the cold for another 4 hours.
Grill the meat as usual, sprinkling with the remaining soda from time to time.
