Step 1
The most important thing in a kebab is, of course, meat. If you choose good meat, it is very difficult to spoil it, so to speak. A pork neck is perfect for barbecue. It is best to choose meat on the market, be sure to pay attention to the color and smell, that is, to the external signs of freshness and quality.
Step 2
Thoroughly rinse fresh meat with cold water and cut across the fibers into small pieces, shaped like a cube, about 5 by 5 cm in size. Place the prepared meat in a deep bowl or saucepan, salt and pepper well and add your favorite spices to the meat.
Step 3
Peel the onions, cut into rings. We shift the meat with them so that the onion is evenly distributed over all the pieces.
Step 4
Pour all this with kefir so that it covers the meat completely. Kefir gives meat a special tenderness and softness, and also removes unpleasant odors, if any.
Step 5
Close the pan tightly with a lid and send it to the refrigerator for several hours, preferably at night.
