After a long winter, many people like to cook barbecue outdoors. The delicious aroma of smoky grilled meat has become a real symbol of the arrival of spring and the May holidays. As you know, before you put meat on skewers, it must be marinated. But which marinade should you use? There is one way. Thanks to him, the kebab will cook not only very quickly, but the marinating process itself will take only 40 minutes. Moreover, in such a marinade, any meat will turn out to be juicy, including dryish beef.

It is necessary

  • - any meat (pork, beef or lamb) - 1 kg;
  • - onions - 0.5 kg;
  • - dried cilantro (coriander) - 1 tbsp. l. with a slide;
  • - cumin - 0.5 tbsp. l.;
  • - black pepper - 0.5 tbsp. l.;
  • - red hot pepper - a few pinches;
  • - salt - 0.5 tbsp. l.;
  • - sunflower oil - 1 glass.

Instructions

Step 1

First of all, let's prepare the base for the marinade. Take a large deep bowl, pour 1 cup of sunflower oil (200 ml) into it. Now you need to add spices to the oil. So that they can reveal their aroma as much as possible, pour dried cilantro and cumin into a mortar and chop. You can also place them on a cutting board and walk over them with a rolling pin. After that, put them in a bowl along with black ground and red hot peppers. Mix everything together well and leave for 5-7 minutes to soak the oil properly.

Step 2

Meanwhile, peel the onions. Set aside half of one onion, and chop the rest into thick circles or semicircles (without dividing into rings). Rinse the meat under running water, dry it with paper towels and cut into large pieces (if you have lamb, then the pieces can be made smaller).

Step 3

Chop the set onion half as small as possible and place in a small bowl. Add salt to it and stir.

Step 4

Place the onion slices and chopped onion and salt in a bowl with the spice butter and stir well. Then put the meat and all together remember well with your hands so that the oil and onions saturate the meat as best as possible.

Step 5

Leave the meat in the oil and onion marinade for 40 minutes. After the expiration of time, it can be either immediately strung on skewers, or left on the table and use the workpiece later. Meat is stored in this marinade for up to three days, even at room temperature.

Step 6

Thanks to this oil marinade, the kebab will cook much faster. The oil with which the meat is soaked will warm it up from the inside and prevent it from drying out quickly. Therefore, this marinade can be safely called universal for any type of meat.
