Beans are ideal for soup. It contains a lot of vitamins of group B and C, fiber. Thanks to the latter, bean soup satisfies well and is appropriate not only for lunch, but also for dinner, especially after a busy day at work. Here are three bean soup recipes that will leave you feeling full for a few hours.
Chili Bean Soup
This is a recipe for spicy lovers. The addition of cumin and oregano makes this soup very flavorful.
You will need:
- 500 g of tomatoes in their own juice;
- 50 g white beans;
- 40 g red beans;
- 30 g canned corn;
- 1-2 g of ground chili;
- 1-2 g tabasco sauce;
- 100 g ground beef;
- a clove of garlic;
- 1/2 onion;
- salt, cumin and oregano to taste;
- vegetable oil for frying.
Step by step cooking
- Fry medium-sized chopped garlic and onion in vegetable oil. Add ground beef, season with chili, cumin and oregano. Fry the meat until tender.
- Add corn to the minced meat, boiled beans of two types, you can also use canned. Also put the tomatoes in their own juice, it is better to knead them or chop them with a knife beforehand. Simmer over low heat for 20 minutes.
- Pour in the tabasco sauce and balance the taste with salt and sugar.
- Serve the bean soup with sour cream and chopped parsley.
Bean soup with chicken fillet
It is based on the perfect duo of beans and chicken. This combination is emphasized by spices and cream.
You will need:
- 250 g chicken breast;
- 200 g beans;
- 1/4 head of onions;
- 1/4 jalapeno pepper pod
- 1/2 clove of garlic
- 1 tbsp. l. vegetable oil;
- salt and ground cumin to taste;
- 30 ml cream;
- 700 ml of water;
- greens.
Step by step cooking
- Chop the onions and jalapenos, chop the chicken fillet into small pieces, and pass the garlic through a press.
- Fry the onion and pepper in a saucepan in vegetable oil. They should become soft.
- Add fillets and cook for another 3-5 minutes. It is important that the pieces are browned on all sides.
- Send the garlic to the pot. Season with salt and cumin. Keep on fire for a couple of minutes.
- Put the beans, they should be pre-boiled, but you can also use canned ones. Pour in water, wait for a boil and keep on fire for 15-20 minutes.
- Add cream and chopped herbs to the soup and serve.
Bean soup with bacon
Bacon will make a hearty bean soup tastier and more flavorful.
You will need:
- 250 g beans;
- 150 g bacon;
- 1/2 carrots;
- 1/2 onion;
- 800 ml of water;
- 1 bay leaf;
- dried thyme, black pepper and salt to taste;
Step by step cooking
- Soak the beans for at least 12 hours and then drain the liquid.
- Cut the bacon into slices, brown in a saucepan in vegetable oil to let the fat in. Add the beans.
- Finely chop the onions and carrots. Add to the bacon and beans and simmer over low heat for about 10-12 minutes.
- Pour in water, add thyme, bay leaf and pepper, salt. Bring to a boil, adding heat.
- Boil the soup for 1-1.5 hours. The time may vary, it all depends on the beans. If the water boils quickly, add a little more.
- Serve the soup with your favorite herbs.
