This recipe for squash caviar has a very mediocre relationship to Korea itself, but the people have long dubbed the spicy seasoning with which carrots and other vegetables are made in honor of this eastern country. It turned out to be appropriate in a dish traditional for the Russian table. We offer you to look at the classic recipe in a new way and taste a delicious handmade product.
It is necessary
- - 3 kg of peeled zucchini (2 medium);
- - 250 g tomato paste;
- - 1 kg of onions (5-6 pieces);
- - 0.5 kg of carrots (3-4 pieces);
- - 1 head of garlic;
- - 300 g of classic homemade mayonnaise;
- - a bag of Korean carrot seasoning;
- - 2-3 tbsp. l. salt;
- - 0.5 cups of sugar;
- - 3 tbsp. l. vinegar 9%;
- - 1 glass of vegetable oil.
Instructions
Step 1
Peel and dice the courgettes. It is very important! If you grind them first in a meat grinder, the texture of the final dish will be fibrous and the taste will be empty, no matter how many seasonings you add.
Step 2
Pour half a glass of oil into a saucepan or multicooker bowl and add the chopped vegetable to it. It is important that it fried a little, this will give the caviar flavor richness and fullness.
Step 3
Separately fry the onions and carrots in the rest of the oil until half cooked.
Step 4
Pour the onions and carrots into the zucchini, stir and simmer until the products are completely softened, as in the photo. In a slow cooker, this will take no more than an hour. If you don't want to add carrots, add more sugar to the dish.
Step 5
When the vegetables are ready, add the seasoning, chopped garlic, salt, sugar, homemade mayonnaise, tomato paste and mix well. The mixture may already begin to gurgle, spraying everything around, so all these manipulations must be carried out by turning off the heating. This is a recipe for squash caviar with mayonnaise, but you can skip it.
Step 6
Let the mixture sit over low heat or low heat for 5-10 minutes to cook the garlic.
Step 7
Using a blender, thoroughly puree the mixture directly in the saucepan or bowl and cook for another 5 minutes.

The recipe for homemade squash caviar allows you to adjust the degree of chopping, which depends solely on your preferences. On an industrial scale, it is brought to maximum homogeneity.

Add vinegar. If you are going to roll into jars, sterilize them first.
