"Clay", "earthy" or "mud" cake is a very original dessert. It is interesting primarily for its unusual taste and method of preparation. One of the heroines of the popular TV series "How to call this love" ordered such a cake. I propose a recipe for this unusual and delicious chocolate dessert.
It is necessary
- For the test:
- - butter - 200 g;
- - bitter chocolate 70% - 200 g;
- - sugar - 250 g;
- - milk - 100 ml;
- - instant coffee - 3 tsp;
- - flour - 1, 5 cups;
- - baking powder - 1/4 tsp;
- - cocoa - 50 g;
- - eggs - 2 pcs.;
- - water - 100 ml.
- For ganache (chocolate glaze):
- - bitter chocolate 70% - 100 g;
- - cream 33% - 100 ml.
Instructions
Step 1
Dough preparation. Put butter, chocolate (broken into pieces), sugar, coffee in a saucepan. Add milk and water, stir and put on low heat. The chocolate, butter and sugar should melt and the mixture should be brought to a smooth consistency. During the preparation process, the dough must be stirred periodically so that it does not burn. Remove dough from heat and cool to room temperature.
Step 2
Once the mixture has cooled, beat the eggs into it and stir.
Step 3
Combine flour with baking powder and cocoa, stir. Pour the mixture into the chocolate mass in small portions. Make sure there are no lumps. It is necessary to beat the dough with a whisk; it is not worth kneading for a long time.
Step 4
Take a mold with a diameter of about 20 cm, put two layers of parchment paper in it and brush with oil. Put the dough in a mold and place in the oven, preheated to 180 degrees, for 1, 5 hours. The finished cake should be slightly damp. Remove the cake from the oven and let cool.
Step 5
Cooking ganache. Take chocolate and break it into pieces. Heat heavy cream and pour over the chocolate. It should melt. The consistency of the mass will begin to resemble thick sour cream. Lubricate the top and sides of the "clay" cake with ganache. Dessert is ready!
