Beans are a source of beneficial amino acids, vitamins, minerals, proteins and carbohydrates. Despite the fact that they are quite difficult to digest, the dishes from them are very tasty and satisfying. This product goes well with various vegetables and herbs.
Bean cooking rules
Green, young beans in the form of pods cook quite quickly. They must first remove the tips and fibrous sutures. Then they need to be cut into small pieces and boiled in boiling salted water for 15 minutes - this will help them retain their color.
Dry green and white beans should be pre-soaked in cold water for 8-12 hours. It is better to discard beans floating in water. The soaked product needs to be cooked from 40 minutes to 1.5 hours, depending on the dish prepared from it.
For dry beans to cook faster, they should be boiled without salt. This spice, like any others, is best added at the very end.
Soup with green and white beans
Ingredients:
- ½ cup each white and green dry beans;
- 2.5 liters of water;
- 1 head of onion;
- 1 carrot;
- 150 g bacon;
- greens;
- salt and black pepper to taste;
- Bay leaf.
Soak the beans in cold water for 12 hours. Then fold them in a saucepan, cover with clean water and cook, covered, until they are boiled. Meanwhile, cut the bacon into small pieces and fry them in a little vegetable oil. Then put on a plate and in the same pan fry the finely chopped onions and carrots.
When the beans are done, season with salt, vegetables and sautéed bacon. After a couple of minutes, pepper, put the bay leaf and remove from heat. When the soup is slightly infused under the lid, pour it into bowls, add the herbs and serve with croutons.
Garnish of green beans
Ingredients:
- 500 g of green beans;
- 3 glasses of water;
- 1 teaspoon of salt;
- 1 tbsp. a spoonful of butter;
- 2 boiled eggs;
- 3 tbsp. spoons of greens;
- 1 tbsp. a spoonful of bread crumbs;
- spices to taste.
Trim the green beans on both sides and peel any fibrous side seams. Then cut them into 3 parts and slowly lower them into boiling salted water, which must continue to boil. After 15 minutes, drain and transfer to a saucepan with melted butter. Simmer for another 10 minutes. Then add chopped eggs, herbs, and bread crumbs to the beans. Mix everything well and after a minute remove from heat.
French white beans with meat
To prepare such a dish you will need:
- 500 g of white beans;
- 250 g of fatty pork;
- 2 heads of onions;
- 1 tbsp. a spoonful of fat;
- 100 g blood sausage;
- 2 carrots;
- 2 cloves of garlic;
- Bay leaf;
- 2 tomatoes;
- 100 ml of dry white wine;
- thyme, salt and pepper to taste.
Soak white beans in cold water for 10 hours. Then boil for an hour. While they are cooking, cut the pork into small cubes, put in a saucepan with melted fat and simmer over low heat, covered. After 20 minutes, add chopped onion and garlic to it. Drain the cooked beans and place in a saucepan with the meat, along with diced carrots. After a few minutes, add spices, peeled and chopped tomatoes, and wine. Simmer for 5 minutes.
Place some of the remaining fat in ceramic pots and fill them with the bean stew. Add blood sausage pieces, some water, and herbs. Place in an oven preheated to 180 ° C for 30-40 minutes. When the dish is ready, remove the crust that has formed on top and only then serve it to the table.
