A salad with asparagus, shrimp and daikon makes a good cold appetizer. Lemon sauce will complement the salad and combine all the ingredients. The specified amount of food is enough for 3-4 servings.
It is necessary
- - white asparagus - 300 g;
- - shrimp - 400 g;
- - lettuce leaves - 10 pcs.;
- - daikon - 1 pc.;
- - olive oil - 4 tbsp. l.;
- - lemon - 1 pc.;
- - vegetable oil - 2 tbsp. l.;
- - salt - 2.5 tsp;
- - sugar - 0.5 tsp;
- - ground black pepper - a pinch.
Instructions
Step 1
Rinse the daikon, lettuce and asparagus with water. Carefully (with a sharp vegetable knife) remove the thin top layer from the asparagus stalk, cut the stalks into 5 cm long cubes. Cut the daikon into thin strips. Tear lettuce leaves by hand or chop coarsely.
Step 2
Boil water in a saucepan. Add 2 teaspoons of salt, half a lemon, sugar. Dip the asparagus stalks in water and cook for 10 minutes.
Step 3
Peel the shrimps and quickly fry in vegetable oil (1-2 minutes).
Step 4
Cooking the sauce. Squeeze the juice out of the remaining half of the lemon (you need about 1 tablespoon of lemon juice). Combine lemon juice, olive oil, remaining salt, pepper. Stir.
Step 5
Combine asparagus, daikon, shrimp, lettuce, mix gently. Put some of the resulting salad on a serving plate, season with sauce and serve immediately. Salad ready.
