Step 1
Fry the meat with eggplant. Cut the pork into small pieces and fry for half an hour until golden brown. Cut the onion into half rings and cut the carrots into strips. Remove the skin from the eggplants, cut them into small cubes and soak in warm water for 10 minutes to remove the bitterness. Add onions, carrots to the meat and fry for another 15 to 20 minutes. Then add the eggplant and simmer for another 15 to 20 minutes, stirring occasionally. Salt, add spices to taste.
Step 2
Make eggplant rolls with meat for a snack. Cut the eggplants into thin slices. Season with salt and leave for 30 minutes. Put the eggplants in boiling water and cook for about two minutes, and then discard them in a colander. Boil the rice and cool. Finely chop green onions, cilantro and olives, pass the garlic through a press. Grate the cheese on a fine grater. Combine minced meat, rice, herbs, garlic, olives and cheese. Season the filling with salt and pepper to taste.

Spread the meat mass on the eggplant slices. Roll each slice into a roll and secure with a toothpick. Place the rolls in a baking dish. Combine balsamic vinegar with tomato paste and half a glass of water. Pour the sauce over the rolls and bake in an oven preheated to 180 ° C for about 40 minutes.

Stuff the eggplant halves with minced meat. To do this, cut off the stem of the eggplant and cut each fruit lengthwise into 2 parts. Remove the pulp from the halves with a spoon. Salt the resulting eggplant boats and leave for half an hour. Prepare the filling at this time. Finely chop the onion, pass the garlic through a press, finely chop the eggplant pulp. Fry the onion until golden brown, add the garlic and pulp. Add the minced meat and fry the mixture until tender. Then add spices and salt to taste.

Drain the juice from the eggplant. Stuff each half with the finished filling. Place the eggplants in a greased baking dish.
