"Kupaty" is a name for delicious meat sausages cooked at home. They are based on meat, onions, garlic and spices. Try this wonderful Georgian substitute for sausages from the store. And just feel the difference.
Kupaty: a short description of the dish
Despite the fact that the basis of meat kupat is a certain set of products, there are a lot of recipes for preparing these sausages. At the same time, you should not consider them an analogue of store sausages. Homemade kupat is an absolutely natural product. Which makes them healthy, nutritious and safe to feed to children.
Ready-made raw semi-finished products, cooked by yourself, can be baked in the oven, cooked on the grill, boiled in broth and fried in a pan. Which method of heat treatment to choose depends on your taste and preferences.

Recipe for making kupat
Choose the meat at your discretion. You can take chicken, pork, beef or lamb. Thus, by changing the ingredients, you can change the taste of the dish itself. As a casing for kupat, it is better to take natural pork intestine, avoiding collagen substitutes. Only taking these subtleties into account can you achieve delicious taste and quality.
Rinse the meat under running water and chop into small pieces. The use of a meat grinder is also allowed. Transfer the minced meat to a bowl. Remove the husks from the onions and garlic and grate them. If a meat grinder was used to prepare minced meat, then onions and garlic can also be passed through it. After that, add all seasonings - salt, ground cilantro, red and black peppers to the bowl to the meat, onions and garlic, and then mix everything together well. To make the finished minced meat more dense, stir it with your hands.
Rinse the pork intestine thoroughly from the outside and from the inside, and then dry it - it should become completely dry. Then, using the sausage attachment, fill it with the prepared minced meat so that the piece is not too dense. Divide it into equal parts (up to 15 cm), tie them with threads and cut. Thus, you get semi-finished products in the form of sausages. Now they need to be heat treated, for example, fried in a pan.
How to fry kupaty in a pan
Before frying, the kupaty must first be boiled so that the shell becomes soft and pliable. To do this, dip them in a saucepan of cold water and heat it to 80-90 degrees without boiling. Maintain this temperature for 20 minutes, then remove the sausages from the pan and cool slightly. After that, you can start frying.
Take a frying pan, heat it up, and then pour in the vegetable oil and heat it up. In kupats, use a toothpick to make a few shallow punctures, then place them in the pan and fry on all sides until a delicious golden brown appears. Juicy, aromatic and very tasty kupaty are ready! Serve them together with pita bread, herbs and fresh vegetable salad.
