It is necessary
- - 500 g of beef kidneys;
- - 2 onions;
- - 2 carrots;
- - 1 root of parsley and celery;
- - 5 potato tubers;
- - 2 pickled cucumbers;
- - 3 tbsp. spoons of meat broth;
- - 1/2 cup pearl barley;
- - 1/2 cup sour cream;
- - pepper and salt to taste;
- - parsley, dill, green onions.
Instructions
Step 1
We divide the kidneys. We remove fat, films and ducts from them.
Step 2
We cut each kidney in half lengthwise and soak for 4-5 hours in slightly salted cold water.
Step 3
Put in a saucepan and fill with plenty of water, boil, remove and wash in cold water.
Step 4
Cut the kidneys across into thin slices, add fat and simmer with seasonings until soft.
Step 5
We wash the cereal, put it in a saucepan, fill it with water and cook until half cooked.
Step 6
Add beef kidneys, pre-cut onions, grated carrots, roots, potatoes cut into small wedges to this pan. Cook over low heat until cooked through.
Step 7
5-7 minutes before the end of cooking, add the peeled and diced pickled cucumber. Bring to a boil.
Step 8
When serving, season with sour cream or mayonnaise, sprinkle with herbs. You can add croutons to the soup.
