Beef kidneys belong to category 1 offal. From them you can cook first and second courses. Beef kidneys are often used to prepare meat gravies, which are served with potatoes, cereals, peas, and beans.
The main rule for preparing various dishes from beef kidneys: you cannot mix them with other meat products. This is due to the rather specific smell and taste of the offal. Before cooking, be sure to soak the kidneys in cold water for several hours. Beef kidneys stewed in sour cream are prepared as follows. You will need: 1 kg of offal, 2 onions, 1 tbsp. flour, 200 g sour cream, 2 cloves of garlic, parsley, vegetable oil, salt, spices - to taste. Cut the prepared buds into 5mm thin slices. Rinse and drain off excess liquid. Heat a skillet, add oil, add kidneys and fry until half cooked. Place them in a bowl. Heat the oil in a heavy-walled saucepan, add the diced onion, crushed garlic and simmer for a while. Then add the kidneys, sour cream, chopped herbs, pepper, salt, wheat flour and simmer for 3-5 minutes, stirring occasionally. Serve the cooked meal hot.
As a side dish for kidneys stewed in sour cream, you can make boiled potatoes and salad.
Prepare beef kidney stewed in a pot with onions. You will need: 1 kg of beef kidneys, 1 liter of boiled water, 1 tbsp. flour, 6 potatoes, 3 onions, 5 tbsp. vegetable oil, 2 pickles, bay leaves, herbs, black peppercorns, salt - to taste.
Put the prepared kidneys in a saucepan with cold water, bring to a boil, drain the water. Rinse the offal, cover with boiled water and boil until tender. Prepare the sauce from the broth in which the kidneys were boiled. Fry the flour in butter until dark brown, dilute with hot broth and cook for 10 minutes. Cut the kidneys into slices. Peel the onion, finely chop and sauté in oil, place in a skillet with kidneys and fry for 3 minutes. Put beef kidneys and onions in a pot, add potatoes, peeled and diced, cucumber slices, peppercorns, bay leaves, salt to taste, cover with prepared sauce and put in the oven for half an hour.
Before serving, transfer the contents of the pot to a dish, garnish with herbs.
To prepare stewed beef kidneys with potatoes, you will need: 1 kg of beef kidneys, 1 kg of potato tubers, 250 g of pickled cucumbers, 3 onions, 300 g of tomato ketchup, 5 cloves of garlic, white pepper, dried basil, vegetable oil, salt - to taste … Pour the prepared beef kidneys with water, boil the water until foam forms. Drain the liquid, rinse the offal. Repeat this procedure at least 2 times. Cut the buds into pieces about 2 cm thick, place them in a frying pan heated with vegetable oil and fry a little. While frying, add finely chopped onions, peppers and basil. Transfer the kidneys to a saucepan, pour 0.5 tbsp. water, add ketchup and finely chopped pickles. Simmer until tender, stirring occasionally. Peel and slice potatoes. Fry it until half cooked in vegetable oil. Transfer to a saucepan with kidneys, stir and simmer until the potatoes are tender.
