This dish cannot be called simple or quick to prepare. But a very original way of serving it deserves that every skilful housewife try to cook this truly English dish at least once in her life.
It is necessary
- - 725 g of beef;
- - 265 g of kidneys;
- - 215 g of onions;
- - 55 g of wheat flour;
- - salt pepper;
- - 165 ml of beef broth;
- - 415 g pancake flour;
- - 220 g of fat;
Instructions
Step 1
Rinse the kidneys and meat thoroughly, wipe with a paper towel and cut into small pieces. Peel the onions, chop finely and mix with the meat, salt and pepper, mix everything well.
Step 2
Sift the pancake flour, mix with fine salt, pepper and add the melted fat. Stir gently and slowly pour 310 ml of cold water, start the dough.
Step 3
Knead the finished dough thoroughly with your hands, and then roll out a thin layer of it. A small portion of the dough should be left for the lid.
Step 4
Put the finished layer of dough into a special baking dish, while its edges should hang on the sides of the mold.
Step 5
Put wheat flour into the finished filling, mix everything and squeeze out excess liquid with a colander. Transfer the filling onto the dough, pour the beef broth on top and cover with the remaining dough for the lid.
Step 6
Pinch the edges well, close the pudding on top with two sheets of oiled paper and place in a large saucepan of boiling water.
Step 7
Cook the pudding for about 5 hours, making sure to add water to the pot as it boils down.
Step 8
You can serve pudding with green peas, and mashed potatoes are ideal as a side dish.
