Many tasty and healthy dishes can be prepared from kidneys, which belong to category 1 offal. The kidneys are rich in selenium, zinc and iron, they contain vitamins PP and group B. Dishes from the kidneys have a beneficial effect on the thyroid gland and are a good prevention of cancer.
Stewed kidneys
To prepare kidneys according to this recipe, you will need:
- 1 kg of beef kidneys;
- 2 onions;
- ½ glass of dry white wine;
- Bay leaf;
- 7 peppercorns;
- ground pepper;
- vegetable oil;
- 1 glass of meat broth;
- salt.
Cut the beef kidneys in half, peel off films and lard, then fill with cold water and soak for 3 hours, changing the water several times during this time. Then pour a liter and a half of clean water into a saucepan, bring it to a boil, salt, add peppercorns and bay leaves, lower the prepared buds and simmer for about an hour.
Peel the onions, cut into large chunks and fry in a little vegetable oil. Then cool and grate the onion in the same pan where it was fried. Add vegetable oil, pour in the meat broth and put the pan over low heat. Remove the kidneys from the broth, let them cool slightly, then cut them into thin slices and place in the skillet. Simmer for 10 minutes, pour in dry wine and simmer for another 5 minutes.
Kidneys in Russian
To prepare kidneys in Russian, you need to take the following components:
- 1, 2 kg of beef kidneys;
- 3 tbsp. l. margarine;
- 6 potatoes;
- 3 onions;
- 1 parsley root;
- 2 carrots;
- 2 pickled cucumbers;
- 1 tbsp. l. flour;
- ½ cup tomato paste;
- 6 cloves of garlic;
- 1 bay leaf;
- parsley;
- ground black pepper;
- salt.
Cut the buds in half, peel off films and fat, fill with cold water and soak for 3-4 hours, changing the water several times. Then again pour fresh water, put on medium heat and bring to a boil. After that, drain the water, and rinse the kidneys well and fill it with clean cold water again. Put on low heat and cook until tender (about an hour), removing foam and fat. After that, cut the finished kidneys into slices, sprinkle with flour and lightly fry in a deep frying pan or saucepan.
Peel and cut onions, roots and potatoes into slices. Then fry in margarine and mix with kidneys. Pour in tomato paste diluted in cold boiled water. Bring to a boil and simmer over low heat.
Peel the pickled cucumbers, cut into slices and simmer slightly. After 25 minutes from the beginning of the kidney stewing, add the prepared cucumbers. Continue simmering for another 15 minutes. Then add bay leaf and minced garlic, stir, simmer all ingredients together for 5 minutes and remove from heat. Serving the kidneys in Russian to the table, sprinkle them with finely chopped parsley.
