Change the dishes into which the distillation product is collected, heat the wine from 65 to 78 ° C and quickly reduce the heating rate, maintain the boiling point between 78 and 83 ° C, stop distillation when the wine temperature reaches 85 ° C. Collect the product of the second fraction separately, it will be an edible liquid. Raise the boiling point, complete the distillation, collect the third fraction, the so-called "scented water", in a separate bowl.
