Step 1

Prepare your apples. For wine, juicy sweet and sour apples of winter variety are better suited. An original taste can be obtained by using several varieties of apples at once. Cut the fruit into 4 pieces and remove the seed capsule. You don't need to wash the apples first. Wipe heavily soiled fruits with a cloth. Grate the pulp together with the peel on a fine grater or pass through a meat grinder. Mix the applesauce with the raisins, transfer the mixture to a wide container and pour in a liter of water. Cover the crockery with two layers of cheesecloth. Leave the mixture at room temperature for 3 days. Stir the mass 3 times a day for the first 2 days.

Use a sieve to collect the pulp that has floated to the surface. Squeeze the juice. Add sugar to the wort. For 1 liter of liquid, an average of 250 g of sugar is required, depending on the variety of apples. Pour the future wine into a sterilized narrow-necked glass bottle. Please note that foam will form during fermentation, so do not fill the bottle more than 3/4 full.

Close the bottle tightly with a lid, in which poke a small hole. Insert a long rubber tube into it. Cover all the holes with plasticine to exclude the access of oxygen, otherwise you will get vinegar instead of wine. Dip the end of the tube into a jar of water. Carbon dioxide will be released through this tube during fermentation.

Leave the wine for 30-40 days in a dry dark place at a temperature of 20-22 ° C. Then carefully, trying not to loosen the sediment, pour the wine into another bottle. Pour the bottle under the neck so that there is no room for air. Let the wine mature for another 3-4 months. After that pour the clarified wine into bottles without sediment and cork. Apple wine with a strength of about 8-9 degrees is ready to drink. Store apple wine in a cool dark place for no more than 1.5 years.
