The film taken from soy milk, called "fuzhu" in China, "yuba" or "yuka" in Japan and Korea, has become widespread in Russia under the name "soy asparagus", although it has nothing to do with asparagus.
A thick, delicate film taken from slowly boiling soy milk is fuju. This is a very useful product containing vitamins B and E, as well as a huge amount of substances necessary for a person, such as potassium, iron, calcium, copper, phosphorus, antioxidants and others.
The calorie content of fuzhu is from 250 to 500 kcal per 100 grams, and the protein content is about 40%. Fuzhu is one of the most important sources of healthy vegetable protein, therefore it is popular among vegetarians and not only.
Soy asparagus is a good prophylactic agent for the prevention of cancer, osteoporosis and diseases of the cardiovascular system.
Fuju's own taste is practically absent, but this product tends to absorb the aroma and taste of those products with which it is cooked. It can be used for salads and as an independent dish soaked in spiced brine. Often, soy asparagus is added to soup and stews, and is also cooked with rice, mushrooms, or vegetables.
Do not forget that, like any product, fuju should not be consumed in excess quantities, this can lead to pancreatic diseases. But the use of this product 2-3 times a week will be a tasty and healthy addition to the diet.
