Serves 6: 4 medium apples, 150 ml cold water, 50 g flour, 50 g cornstarch, 1 tsp. baking powder, 1 egg, sugar for powder, vegetable oil. For cream: 220 ml cream with 35% fat, 200 ml milk, 6 yolks, 150 g sugar, 1 tbsp. l butter, a pinch of ground nutmeg

Step 1

Grease six small molds with butter and sprinkle with 1 tablespoon of sugar. Prepare the cream. Mix cream with milk, bring to a boil, but do not boil. Remove from heat. Beat the yolks in a bowl with sugar until smooth. While stirring constantly, gently pour in the hot milk mixture. Add ground nutmeg. Pass the mixture through a sieve.

Fill the pre-prepared molds with cream, place them on a tray filled with water. Put in a preheated oven to 170 degrees for 40 minutes. Remove from oven and let cool. Peel the apples and cut into slices half a centimeter thick, removing the core.

Prepare the batter. Sift flour, cornstarch and baking powder into a bowl. Add the egg and cold water and beat the dough quickly.

Heat vegetable oil in a saucepan (preferably oil for deep fat). Dip the apple circles into the dough and immediately put in hot oil. Cook until golden brown. Transfer to paper towels or napkins to drain off excess oil. Serve with cream.
