Step 1

Pour water into a saucepan, add granulated sugar there. Stir the sugar and water with a spoon and place the pot over high heat so that it only heats up on one side. When heated, foam will be released on the second side, which needs to be removed from time to time.

Step 2

After the foam has finished, place the pan so that it heats up evenly, do not reduce the heat. You can stir the syrup again. Now you need to adjust the ratio of water to sugar to the one you want - it will be different depending on whether you are going to make a biscuit impregnation, frosting or homemade caramel.

Step 3

The first test (the ratio of water to sugar 50x50%) does not require bringing the syrup to a boil, it is enough just to dissolve the required amount of sugar in water. It is defined as follows: if you take a drop of cooled syrup on your fingers and rub them against each other a little, they will become sticky.

Step 4

The second test (75% sugar and 25% water) is achieved if a drop of syrup, sandwiched between your fingers, not only sticks, but stretches out into a thin thread when you spread your fingers. You can also drop a spoonful of syrup on a cold plate, squeeze it slightly with a spoon and lift it up - a thin thread will also be pulled behind it.

Step 5

Third sample (85% sugar and 15% water). It is checked in the same way as the second, only the caramel thread must be thick.

Step 6

Fourth trial. The syrup is already quite thick, only 10% of the water remains in it. To make sure of this, you need to scoop up a little spoon and dip it into a glass of cold water. If everything is correct, you can mold a soft ball from the resulting mass.

Step 7

Fifth trial. It is checked in the same way as the fourth, only the ball will turn out to be hard.

Step 8

Sixth test - only 2% of water remained. At this stage, the syrup will turn into caramel and it will not be possible to roll the ball - the mass will break in the hands, will cease to be sticky and will begin to crumble into small pieces when bitten.

Step 9

With further cooking, the mass will first turn yellow, then turn black and begin to emit suffocating smoke. If at this stage you add water to it and stir it quickly, you will get burnt sugar, cough medicine.
