"Golden syrup" (golden syrup, literally from English - "golden syrup") is a frequent ingredient in recipes of English and American cuisines, used mainly as a honey substitute for allergy sufferers. Unfortunately, sometimes it can be difficult to buy it, so I suggest making it yourself.
It is necessary
- First cooking stage:
- - 240 g of sugar;
- - 60 g of water.
- Second cooking stage:
- - 1, 2 kg of sugar;
- - 720 g of water;
- - 60 ml freshly squeezed lemon juice.
Instructions
Step 1
In a large skillet (you can also use a thick-walled non-stick saucepan) melt 240 g of sugar with 60 g of water over low heat. From time to time, the pan needs to be rotated in a circular motion so that the sugar caramelizes evenly.
Step 2
Boil 760 ml of water. As soon as the mixture in the pan turns dark brown, carefully pour in boiling water, add the rest of the sugar and freshly squeezed lemon juice.
Step 3
Set the burner to maximum heat. Wait until the contents of the pan boil, and again reduce the heat to low. Boil the syrup for 45-50 minutes, stirring occasionally with a wooden spatula.
Step 4
Wash and dry the jars into which you are going to pour the syrup. Pour the prepared syrup into a container (I recommend using a funnel, since pouring the syrup out of the pan is not very convenient), close and store in a cool place.
