What squids to use for salad

To prepare a delicious salad, it is better to use unpeeled squid, since they are not pre-cooked. Otherwise, these seafood will need to be kept in boiling water for a shorter amount of time, otherwise their meat will look like rubber.

When choosing squids, you should pay attention to the color of their skin - it should have a pinkish-lilac hue and a smooth structure. Brown cracked skin indicates repeated freezing of the product and not the first freshness.

How much to cook squid for salad

Before you start cooking, the squid should be thawed at room temperature or in cold water, and their head should be cut off. Then pour boiling water for 1 minute, remove and peel the skin, which will curl under the influence of hot water. After that, it is necessary to remove all the insides and the rigid chord that runs along the back from the squid carcass.

Squids, cut and washed under running water, can be cooked for salad. To do this, boil water in a saucepan and salt it a little. Then lower the squid carcasses in a saucepan for no more than 10-15 minutes. The finished squid should be cooled, cut into rings or cubes and added to the salad.

It is very important not to overexpose the squid in water, otherwise they will become very tough and decrease in size.

Squid salad recipe

To prepare this light yet satisfying salad, you will need:

- 6 squids;

- 6 eggs;

- ½ a head of Chinese cabbage;

- 300 g of boiled and frozen shrimp;

- 2 fresh cucumbers;

- 3 tbsp. tablespoons of olive oil;

- 1 teaspoon of Dijon mustard;

- 2 tbsp. tablespoons of lemon juice;

- salt to taste.

Instead of olive oil, lemon juice, mustard and honey, you can use regular mayonnaise.

Defrost the squid, cut off their head, peel the skin and entrails as described above. Then rinse thoroughly under water and soak in boiling salted water for 10 seconds. After you take out the squid, dip the boiled-frozen shrimp in the same water, wait until they boil, and then remove.

Cool the boiled seafood to room temperature. Cut the squid into rings and peel the shrimp. Put all the ingredients in a salad bowl, add hard-boiled and coarsely chopped eggs, cucumbers, and chopped Chinese cabbage.

Prepare a salad dressing. To do this, mix olive oil, lemon juice, mustard and liquid honey in a separate container. Pour the prepared dressing over the squid salad, season with salt to taste, stir and serve.
