One of the secrets of a delicious dish is choosing the right side dish. To do this, it is necessary to take into account the taste characteristics of meat or fish. So, beef goes well with vegetables, legumes, rice and pasta.

- For a vegetable side dish:
- - 200 g broccoli;
- - 450 g of Chinese cabbage;
- - 150 g green beans;
- - 50 g green onions;

- - 2 tbsp. l. white table wine;
- - 2 tbsp. l. soy sauce;
- - vegetable oil;

- - sugar;
- - ground black pepper;

- For seashells in white wine:
- - 500 g of pasta (shells);
- - 500 ml of dry white wine;
- - 4 tbsp. l. olive oil;
- - 3 cloves of garlic;
- - 60 g of hard cheese;
- - 1 hot red pepper;
- - 2 small zucchini;
- - 100 g of spinach;
- - 1 bay leaf;
- - freshly ground black pepper;
- - salt.
- For spicy rice:
- - 3 cups of rice;
- - 6 glasses of water;
- - 1 large onion;
- - 1 tomato;
- - 1 tsp cumin;
- - 1 pod of dry cardamom;
- - 4 things. carnations;
- - 1 bay leaf;
- - ½ tsp. salt;
- - 1 tbsp. l. cashew nuts;
- - 2 tbsp. l. vegetable oil.

Step 1
Vegetable side dish
Rinse all vegetables thoroughly under running water, and then divide the broccoli into inflorescences, cut the Chinese cabbage into large pieces, and chop the green beans into pieces 4-5 centimeters long, chop the green onion and a clove of garlic with a knife. Fry the sesame seeds in a dry skillet until golden brown. In vegetable oil heated to 160 ° C, stirring constantly, fry the garlic for a few seconds. Then add broccoli and cook for a couple more minutes. Then add the rest of the ingredients: Chinese cabbage, green beans, and green onions. While stirring, fry everything together for 2-3 minutes and add soy sauce, white table wine, and 4 tablespoons of water. Season to taste with salt, sugar and ground pepper. Simmer vegetables over low heat until tender. When serving, garnish with herbs and sprinkle with sesame seeds.
Step 2
Seashells in white wine
Pour wine into a saucepan, add 2 tablespoons of olive oil and bay leaf, add shells and pour the required amount of boiled hot water. Boil the pasta until tender and discard in a colander. Then heat the remaining olive oil in a skillet and fry the chopped garlic and finely chopped hot peppers in it. Then add the diced zucchini and simmer for 5-10 minutes over low heat. Pour boiling water over the spinach, let stand and place on a sieve. Then chop finely and add to the pan. Continue to simmer everything together for literally another minute, then stir the shells with the cooked vegetables. Season with salt and pepper. Sprinkle with grated cheese and serve as a side dish with the beef stew.
Step 3
Spicy rice
Rinse and soak rice in cold water. Peel the onions, chop with a knife and fry over low heat in vegetable oil until brown. Add cumin, cardamom, cloves, bay leaf and sauté all together for a few seconds. Then pour in the water, let it boil and place the peeled and finely chopped tomato. Add cashews and strained rice. Salt, mix everything thoroughly and cook over very low heat for 15 minutes.
