Beef with celery and mushrooms

Such a dish is best prepared from young, quickly cooking meat. The top or bottom of the neck will do, as well as a ham.

You will need:

- 1 kg of beef fillet;

- 400 g of fresh mushrooms;

- 300 g of celery root;

- 0.5 glasses of dry white wine;

- olive oil;

- salt;

- ground black pepper.

Rinse the beef in cold water, dry it, cut off the fat and films. Cut the meat into cubes. Heat olive oil in a skillet and fry the beef until golden brown. Place the meat in a greased ovenproof dish, add coarsely diced celery and 4-cut mushrooms. Salt everything, sprinkle with freshly ground black pepper and cover with dry white wine.

Cover the tin tightly with foil and place in the oven at 200 ° C. After 15 minutes, remove the foil and brown the meat for another 15-20 minutes. Serve the beef garnished with baked potatoes or crumbly rice. The dish can be complemented with a glass of chilled white or rosé wine.

Oven steaks

This dish can be prepared from cheap cuts of meat - for example, from the belly or shank. To make the beef tender and tasty, simmer it in the oven for at least 3 hours, resisting the temptation to remove the lid from the stewpan. Properly cooked meat literally melts in your mouth.

You will need:

- 1 kg of beef;

- 350 g of onions;

- 2 cloves of garlic;

- 300 ml of ready-made beef broth;

- 1 tbsp. a spoonful of mustard;

- 2 bay leaves;

- 2 tbsp. tablespoons of wheat flour;

- 0.5 tsp dried thyme;

- salt;

- freshly ground black pepper;

- vegetable oil for frying.

Combine flour with salt and pepper. Rinse the beef, dry and cut into 6 steaks. Lightly grease each one with mustard and roll in the flour mixture. Heat 1 tbsp in a skillet. a spoonful of vegetable oil and quickly fry the steaks on both sides. Transfer the beef to a large saucepan with a lid, sprinkle with dried thyme and bay leaves.

Pour some more oil into the skillet and sauté thinly sliced onions and crushed garlic in it. Stir in the remaining spice flour and add the beef broth. Cook the sauce, stirring constantly, until smooth and moderately thick. Pour the sauce over the meat, cover the saucepan with a lid and place in the oven preheated to 160 ° C. Simmer the steaks over low heat for 3 hours without lifting the lid. Serve the beef with mashed potatoes or grilled vegetables. Sprinkle each serving with finely chopped parsley.
