Choosing raw smoked sausage, you do not need to chase a low price. In principle, this product cannot be cheap, it does not belong to the number of everyday goods and is a delicacy. Unlike boiled sausage, in the production of which moisture is added to the meat, the manufacture of a raw smoked product, on the contrary, requires the removal of liquid. As a result, it turns out that from the same amount of meat, raw smoked sausage will turn out to be half as much as boiled sausage. In addition, it takes much more time to produce it: a good raw smoked sausage is made for about a month and a half, while boiled sausage can be made in a day.

However, a solid price is not yet an indicator of high quality. Sometimes manufacturers set prices based on their own appetites, and the real value of the product has little to do with the cost. So a cheaper sausage may not be inferior, or even better expensive.

Take a look at the cut of the sausage. In good stores, selling raw smoked sausage, they should show customers the slices so that they can orient themselves and buy the right product. Evaluate the color - for the right product, it should be reddish, not gray. At the same time, pieces of bacon in a good sausage are evenly distributed, and there should not be too many of them - bacon is sold in another department.

Examine the sausage loaf itself. It should be smooth, dry, dense, slightly wrinkled, the shell should not be damaged.

Of course, it will not be superfluous to read the information on the packaging. The label must contain complete information about the product: composition, nutritional value, date of manufacture, storage conditions, expiration date. It will be a plus if the package has the abbreviation "GOST" indicating the variety (for example, "Braunschweig sausage"). This means that the product is close to the standards set by the state for this type of sausage.
